The best italian appetizer of all time!

To me, this is the ultimate Italian appetizer. When I think of Italian food, I think of tomatoes, olive oil and garlic. The fact that it is an authentic dish served in little Italian villages makes it even better.

There's something about simple authentic food that makes me feel like I am experiencing a little piece of their culture right in my own home.

If you can't travel much....cook. Expose yourself to the flavours, spices and aromas of other countries. it's the next best thing to actually being there.

This appetizer is composed of four ingredients. Tomatoes, bread, garlic and olive oil. Make sure to use a good quality extra virgin olive oil.

What you will need:

•Italian or French crusty bread

•5-6 ripe tomatoes

•4 cloves of garlic minced

•olive oil

•Salt

•Pepper

•Parmesan cheese to garnish when served

Start by cutting up your bread into small cubed shaped pieces. They should be about the size of a crouton or a quarter. Do the same for the tomatoes and when you are done put the bread and the tomatoes in a large mixing bowl. it's very important to keep the proper ratio of bread and tomatoes. You don't want it becoming too loose. The ratio should be about 1 part bread to one part tomatoes.


The consistency you are looking for is that of stuffing. You need to able to form patties of bread and tomato that holds well together. Start mixing the bread and tomatoes together with your hands and then mix in the four gloves of garlic that you have minced. Add pepper and salt to taste as you continue mixing.

Once you have the desired consistency, heat up a non stick pan on medium high and add 4-5 tbsp of olive oil. Form small patties about the size of your hand with the bread and tomato mix.

Gently place the patties into the pan and then let them cook on one side until the bottom turns golden brown. flip them over and do the same on the other side.

Once they are crispy on both sides remove them and place on some paper towels to remove any excess oil.



Now you are ready to plate them and garnish with some parmigiana.

That's it...... get ready for the compliments because they are sure to come!!
